Horseradish Boosts Immunity

The most aromatic and health-benefiting herb is horseradish  (Armoracia rusticana). This herb originated in Asia and contains a high  amount of vitamin C, provitamin A and minerals.  Even in small amounts, horseradish stimulates the appetite,  improves the functioning of the digestive system, alleviates coughs and  airway infections, and even has a mild diuretic function. It also  prevents diseases caused by bacteria, viruses, fungi, and protozoa. It  boosts the immune system and can even protect the body from cold-induced  diseases.

Try out this horseradish chutney!


INGREDIENTS:
• 7 oz. / 200 g tomatoes
• 14 oz. / 400 g horseradish
• 4 onions
• 2 spoonfuls of clove
• 2 spoonfuls of ground cinnamon
• 1.7 fl oz. / ½ dcl vinegar
• 4 chili peppers
• 14 oz. / 400 g sugar


PREPARATION:
Wash the vegetables, grate the horseradish, and crush the cloves. Chop  up the unripe tomatoes, onion, and chili peppers, then add salt. Leave  the mixture in a bowl overnight. In the morning, add the rest of the  ingredients. Stew the chutney base over a mild fire in a lidded pot  until all excess water has boiled away, then let the horseradish chutney  cool down. Seal in jars and store. The chutney tastes best after two to  three months.

Great Provolone Frittata with Zucchini and Cherry Tomatoes

Are you looking for something delicious that won’t burden your digestive system? Try this frittata – it is healthy, yet still fast and easy to make!      


INGREDIENTS:

  • 4 eggs
  • 4 cherry tomatoes, halved
  •  1 small zucchini
  • 2 Tbsp. (30 g) olive oil
  • 4 Tbsp. (60 g) grated provolone cheese
  • ½ c. chopped onion
  • salt (to taste)
  • freshly ground pepper
  • spring onion – for decorating
  •  ¼ c. slivered fresh basil
  • a small handful of flat-leaf parsley

PREPARATION: Heat the oil in a nonstick skillet over medium heat. Add diced zucchini and onion. Cook, stirring often, for about one minute. Cover and reduce heat to medium-low. Cook, stirring  occasionally, until the zucchini is tender, but not mushy, about 3-5  minutes. Meanwhile, whisk the eggs with salt, pepper, fresh herbs and 2  tablespoons of grated provolone cheese. Pour the seasoned eggs over  the zucchini and lay the halved cherry tomatoes on top. Sprinkle the  mixture with the rest of the provolone cheese. Cook for about two  minutes until the eggs have thickened. Then place the skillet into the  heated oven under the grill to finish the frittata off until it is  golden brown about 3-5 minutes. Decorate with chopped spring onion and  serve with fresh bread.

Lungwort: Heal Your Lungs Naturally

Fall weather can be hard on the respiratory system. If you come down with cough, asthma, or bronchitis, you can try supplementing your treatment with an herb that seems like it was designed to heal lungs.   Lungwort (Pulmonaria officinalis) is easily recognizable – its  flowers shine with a colorful palette of practically all shades of pink and purple.  It’s widespread in Europe, growing natively in northern Italy, the  Netherlands, Denmark, and Sweden, and has been naturalized in  the British Isles. If you don’t happen to live in any of these areas,  don’t worry, since lungwort extracts can be bought online as well.   


USING LUNGWORT

Tea made from its flowers or leaves can help fight coughs and minor respiratory illnesses. Lungwort can also be combined with other herbs  to increase its healing effect and to counter its mild blood  coagulating effect. People suffering from high blood sedimentation  shouldn’t use lungwort on its own or for long term use. Other than that,  lungwort is helpful for regenerating damaged tissue after the consumption of concentrated alcohol, hot food or drink, or chemicals.      


Tea blend for healthy lungs:


INGREDIENTS: 

  • 5 parts lungwort flowers (or leaves)
  • 5 parts coltsfoot leaves
  • 4 parts horsetail
  • 4 parts knotweed
  • 3 parts plantain

DIRECTIONS: Mix all herbs together and pour 17 fluid ounces or half a liter of  boiling water over 2 tablespoons of the mixture. Cover and let steep for  15 minutes. Strain and drink three times a day.
